Stuffed Jalapenos!
Feb 6th, 2012 | By HindsiteHealth | Category: Blog post, Food JournalYesterday was Super Bowl Sunday. Due to certain children thinking certain projects in school were optional, we didn’t attend a party, as said kids were at the table doing homework.
So it was up to me to throw a few tasty treats together! One of those tasty treats were stuffed jalapenos.
I admit I was inspired. I went to lunch with my awesome husband at a smoke house BBQ joint down town. They had some jalapenos stuffed with sausage and cream cheese, wrapped in bacon and smoked for several hours. I’m told they were fantastic.
However, I can’t have cheese.
I don’t have a smoker.
I DO have jalapenos, sausage, bacon, and an oven! Really, do you need much else?
First I split my jalapenos, cleaned them out and stuffed them with sausage. This was just simple mild Italian sausage.
I set my oven to preheat to 375° F.
Then I wrapped these bad boys in bacon and laid them on my roasting pan.This allows the bacon and sausage fat to drip away. Normally I save the drippings, but I think this time they got tossed. They would have been jalapeno infused – that might have been good! I’ll save it next time and cook my eggs in it the next morning.
It took about 45 minutes to cook them thoroughly. The bacon was cooked, but not crunchy, a meat thermometer stuck in the largest of the peppers showed it to be above 150° F.
Even my spiced challenged daughter enjoyed these! My husband crisped his up in the toaster oven, broiling them for a few minutes to give it some extra crunch.
When I heal my food sensitivities, I’ll be adding cheese to these.
Maybe we’ll get a smoker soon too!
